No Knead Rustic Italian Whole Wheat Bread Recipe

Enjoy fresh homemade Italian bread without special equipment or techniques. No kneading is required and a handful of ingredients gives you the perfect delicious healthy whole wheat crusty bread.

  1. 2 c lukewarm water
  2. 1.5 c bobs red mill whole wheat flour
  3. 1.5 c bobs red mill unbleached white all-purpose flour
  4. 1 tsp salt
  5. 2 tsp raw sugar
  6. 1 packet of active dry rapid rise yeast
  7. 1 Tbsp olive oil
  8. 1 Tbsp sesame seeds (optional)
  1. preheat oven to 375 degrees
  2. add 1 cup of warm water and dry active yeast in a small bowl and let stand until it looks creamy (~5 mins)
  3. in a large mixing bowl add flours, salt and sugar and mix well. after 8 minutes, mix the yeast with a fork and then add it to the flour mixture, mixing it in with a fork until it gets sticky. add the additional cup of warm water a little at a time until the dough starts to form a ball (Note: you may not use all of the water). If the dough seems sticky then add a little bit of flour and start forming a bowl with your hands until it gets a smooth elastic feel.
  4. place the ball of dough in the bowl and cover with a kitchen towel and let it rise (~30 mins to an hour)
  5. after it rises take the ball of dough out and pat it down, form into a ball again and place it back into the bowl to let it rise again.
  6. line a baking tray with unbleached parchment paper, place your dough on top and start to form it into an oval-shape with rounded ends.
  7. brush or rub 1 Tbsp of olive oil and spring with sea salt and/or sesame seeds on top
  8. next, slice the top of the dough with a sharp knife in diagonal cuts
  9. bake for 30 minutes
  10. allow to cool slightly before serving
