  1. 1/4 c canned organic pumpkin puree
  2. 4 tbsp unsweetened or vanilla almond milk
  3. 1 tbsp organic maple syrup or honey
  4. 3 eggs
  5. 1 tbsp coconut oil - melted
  6. 1 tsp vanilla extract
  7. 1/4 organic coconut flour
  8. 1/2 tsp cinnamon
  9. 1/4 tsp baking soda
  10. pinch of nutmeg
  11. pinch of sea salt
  12. organic syrup and toasted pecans for topping (optional)
  1. in a small bowl whisk together dry ingredients (coconut flour, cinnamon, salt, nutmeg, and baking soda)
  2. in a separate small bowl whisk together wet ingredients (pumpkin, eggs, almond milk, maple syrup, coconut oil and vanilla) until well mixed
  3. while whisking, slowly add the dry ingredients to the wet and mix together until batter is smooth
  4. heat a griddle or skillet to medium heat and coat with cooking spray or coconut oil.
  5. pour 1/4c of the batter on to the skillet and cook for 3-4 minutes until you see bubbles forming and then flip. cook for another couple of minutes until lightly browned.
  6. repeat with remaining batter.
  7. Enjoy!
