This is my first recipe for my Mug Cake Series! This almond butter banana chia see bread mug cake is packed with protein and tastes just like homemade banana bread but without all of the oil, sugar and flour.
- half a banana
- 1 TBSP almond butter
- 1 tsp chia seeds
- 1 tsp organic maple syrup (may substitute with honey)
- 1 egg
- 1-2 TBSP water
- 2 TBSP organic coconut flour
- Toppings: granola, drizzled maple syrup, organic non-fat plain greek yogurt, sliced almonds
- spray a mug or small glass bowl with cooking spray. mash 1/2 banana in mug or small glass bowl with a fork. mix almond butter, egg, coconut flour, maple syrup and chia seeds together. mix 1-2 TBSP of water to get cake-like batter consistency. zap in microwave for 3 minutes or until cooked through. top with you're favorite toppings!
