Blackberry Chia Seed Baked Oatmeal

I woke up this morning craving a big bowl of warm oatmeal topped with some sweet berries. Oatmeal has always been a staple breakfast for me because it fills me up and it’s delicious. Lately, I’ve been skipping out on breakfast because of all of the chaos in my house with moving into our first home. I made some baked oatmeal this morning that will last for a few breakfasts (unless my husband eats it all) so that I can make sure that I’m getting the most important meal in. Not only is it filled with healthy ingredients – organic oats, nuts, local honey, organic berries, and chia seeds but it will keep you full all morning long. Don’t forget to add a dollop of yogurt or spread some almond butter on top for some extra protein.

Ingredients
  1. 2 cups of organic rolled oats
  2. 2/3 cup of chopped toasted pecans or walnuts
  3. 2 teaspoons of cinnamon
  4. 1 teaspoon baking powder
  5. 3/4 teaspoon sea salt
  6. 3 tablespoons of chia seeds
  7. 1 3/4 cups of organic unsweetened almond milk
  8. 1/3 cup of local honey
  9. 2 large eggs or flax seed eggs
  10. 1 1/2 tablespoons of melted grassfed organic ghee or coconut oil
  11. 2 teaspoons of vanilla extract
  12. 1 pint of fresh blackberries (1/2 pint mashed)
  13. Optional toppings: yogurt, almond butter, additional fresh fruit, drizzled honey or maple syrup, melted ghee
Instructions
  1. Preheat oven at 375 degrees.
  2. In a medium bowl, add oats, cinnamon, chia seeds, baking powder, salt and toasted nuts. Whisk to combine.
  3. In a small bowl, add milk, eggs, vanilla, melted ghee or coconut oil and honey. Whisk until well blended.
  4. Spread mashed blackberries in the bottom of a cast iron skillet. Cover the fruit with the oat mixture and spread evenly throughout the pan. Next pour the milk and egg mixture on top of the oats evenly and pat down any dry oats.
  5. Bake for 45 minutes or until golden brown.
  6. Remove the baked oven from the oven and top with your yogurt and extra blackberries.
