Almond Butter Banana Oatmeal Pancakes

I’m an oats lover but sometimes I get tired of the same old oatmeal for breakfast – so why not turn them into a pancake! These almond butter banana oatmeal pancakes are gluten-free and packed with protein and fiber.

  1. 2 very ripe bananas mashed
  2. 1 tsp baking powder
  3. 1 c rolled oats
  4. 1/4 tsp cinnamon
  5. pinch of salt
  6. 1 TBSP almond butter
  7. 2 TBSP coconut oil (melted)
  8. 1/2 tsp vanilla extract
  9. 1/2 c unsweetened almond milk
  10. 2 eggs
  1. in a small bowl stir together mashed bananas, coconut oil, vanilla extract and almond butter
  2. beat in the eggs and mix well
  3. in a food processor blend oats until flour like
  4. in a medium bowl mix oat flour, baking powder, cinnamon and salt
  5. pour the wet ingredients into the dry and mix until dry ingredients are moistened
  6. let the batter sit for 10 minutes and add some unsweetened almond milk if the batter needs to be thinned out
  7. heat a skillet over medium-low heat or an electric griddle to 350 degrees. Lightly oil the surface with coconut oil or cooking spray
  8. once the surface of the pan is hot, pour ¼ cup of batter onto the pan. Let the pancake cook for about 2-3 minutes, until bubbles begin to form throughout the pancake
  9. flip it with a spatula and cook for another 90 seconds or so, until golden brown on both sides.
  10. serve warm and enjoy!
