3 Healthy Raw Energy Balls Made with Superfoods

I’m a protein and snack bar addict. So much so that recently I started realizing how much I was spending per week on bars alone. It wasn’t pretty! Here are some quick, easy and healthy energy ball recipes that you can make at home. Enjoy!

Cherry Almond Butter Chia Seed Energy Balls

Ingredients
  1. 1 c raw almonds
  2. 1/2 c dried cherries
  3. 1 T chia seeds
  4. 1/4 almond butter
  5. 1/2 t vanilla extract
  6. 1 T water
  7. pinch of sea salt
Instructions
  1. Place almonds in a food processor and process for about a minute or until fine. Add in cherries, vanilla, almond butter, chia seeds, sea salt, and water and process for 1-2 minutes on high. If the mixture seems to dry, add Β½ teaspoons of water until you've reached the preferred consistency.
  2. Scoop out heaping tablespoons of dough and roll between your palms to create the balls.
  3. Store in an air tight container in the fridge or freezer (for longer lasting balls).

Coconut Collagen Balls

Ingredients
  1. 1 1/4 c shredded coconut
  2. 1 cashews
  3. 1 scoop of vital proteins collagen powder
  4. 2 teaspoons melted organic coconut oil
  5. 2 tablespoons maple syrup
  6. 2 tablespoons unsweetened coconut or almond milk
  7. 1/2 teaspoon vanilla extract
  8. pinch of sea salt
Instructions
  1. Place 1 cup of shredded coconut in a food processor along with the coconut oil until it reaches a paste-like consistency.
  2. Add the maple syrup, cashews, almond or coconut milk, vanilla, collagen powder, and salt and process until well combined.
  3. Shape the mixture into 10 (1-inch) balls and coat with the remaining shredded coconut.
  4. Store in an air tight container in the fridge or freezer (for longer lasting balls).

Chocolate Oatmeal Cacao Balls

Ingredients
  1. 1 1/2 c organic rolled oats
  2. 1/2 t cinnamon
  3. 1 T chia seeds
  4. 1/2 c almond butter
  5. 1 T coconut sugar or raw honey
  6. 1 tsp vanilla
  7. 2 T organic cacao nibs
  8. 2-4 T liquid (water, almond milk)
  9. pinch of sea salt
Instructions
  1. Add oats, cinnamon, chia seeds and sea salt to a food processor and blend well. Add in almond butter, coconut sugar or honey, vanilla, cacao nibs and 2 T of liquid. Blend until the dough sticks together. Continue to add liquid if the mixture is too dry but not too much so that it won't hold shape. Scoop out heaping tablespoons of dough and roll between your palms to create the balls.
  2. Store in an air tight container in the fridge or freezer (for longer lasting balls).
